  • Grana Padano PDO - Italy: 40 g
  • Amazake: 200 g
  • Rice vinegar: 20 g
  • Extra virgin olive oil: 50 g
  • Salt: 5 g
  • Pepper: 3 shakes

Step 1

Grate the Grana Padano using a Japanese grater or Zester Grater.

Step 2

Bring the amazake to a boil, then add the grated cheese and stir to combine.

Step 3

Add rice vinegar, salt, and pepper, and mix well.

Step 4

Using a whisk, slowly incorporate extra virgin olive oil into the cheese mixture to emulsify.

Step 5

Serve the mixture over your favorite vegetables.

Tips

Boil amazake once and lightly melt the cheese. Add extra virgin olive oil little by little and emulsify it.
