Pickled sliced radish and Gouda Holland PGI

Ingredients

- Gouda Holland PGI cheese - Holland: 30 g
- Daikon radish: 60 g
- Salt: 2 g
- Rice vinegar: 20 g
- Light soy sauce: 20 g
- Sugar: 20 g
- Sesame oil: 5 g
Instructions
Peel the daikon with a peeler and slice it into 2 mm thick slices using a slicer.
Sprinkle salt over the daikon slices and let them sit for 10 minutes.
Slice the Gouda cheese into 2 mm thick slices, then cut the slices into rectangles to match the size of the daikon.
In a bowl, combine rice vinegar, light soy sauce, and sugar. Heat in the microwave for 30 seconds at 600W (without covering with plastic wrap) and stir until well mixed.
Gently squeeze out the excess moisture from the daikon slices. Place the squeezed daikon in a Ziploc bag with the Gouda cheese, then add the prepared sauce and knead everything together.
Refrigerate the mixture for 30 minutes, then serve on a plate.
Tips
Having the same thickness for all ingredients balances out their unique flavors.
