  • 50 g Greek Feta Cheese PDO (cut into 1 cm cubes)
  • 1 tbsp Shibazuke pickles(roughly chopped)
  • 4 black garlic cloves (cut lengthwise into quarters)
     
  • 1 tsp vinegar
  • 1 tsp sugar
  • 1 tsp olive oil
  • 2 Aburaage (fried tofu)
  • 150 ml water
  • 2 tbsp sugar
  • 1.5 tbsp soy sauce
  • 200 rice
  • 1.5 tbsp sushi vinegar

Step 1

Mix (A) in a bowl, add the black garlic and Shibazuke pickles, mix well and refrigerate.

Step 2

Open the Aburaage(fried tofu) with scissors, leaving one long piece, and pour boiling water over it to remove the oil. Cool in cold water and squeeze out the water between both hands.

Step 3

Put the water, sugar and soy sauce in a small saucepan and mix well until the sugar dissolves, then add (2), soak and bring to the boil over medium heat. Bring to the boil, reduce the heat to low, cover with a drop-lid and simmer for 10 minutes, then turn off the heat and place in the refrigerator to cool.

Step 4

Add the sushi vinegar to the warm rice and stir to mix, then remove from heat.

Step 5

Squeeze out some of the water from (4), open the sushi rice with the inside facing up, and place the long piece of rice on a rolled sushi mat covered with plastic wrap, with the long piece facing you. Spread half of (4) on top, roll it up tightly from the front, leave it for a while to blend, cut it into bite-sized pieces and place it on a plate with the cross-sections facing up.

Step 6

Add the feta cheese to (1), mix quickly and place on top of (5).
