German pretzel with miso & Belgian chocolate coating

- 4 German pretzels
Miso ganache
- 200 g Belgian milk chocolate
- 120 ml fresh cream
- 50 g Hatcho miso
Toppings
- Sansho powder
- Wood buds
- Goshiki Arare (five-coloured sprinkle) a little of each

Step 1
Make miso ganache. Chop the chocolate, place in a bowl and melt over a pan of simmering water.
Step 2
(2) Heat the cream in a small saucepan until just before boiling, add to (1) and stir.
Step 3
Add the Hatcho miso to (2) and stir while gradually dissolving.
Step 4
Dip the bottom half of the German pretzel in (3) and place on a mesh net. While the ganache is still hardening, top with sansho powder, sprouts and five-coloured sprinkle.
