Pain de Gênes ​with fruit decoration

A crown-shaped baked pastry made with German Lübecker Marzipan PGI, rich in almond flavour. It is also a perfect dessert for gatherings when served with fresh fruit.

Ingredients: 2 servings

  • Lübecker Marzipan PGI from Germany 150g
  • Sugar 30g
  • Egg 127g(Lx2)
  • Flour 25g
  • Strong flour 12g
  • Baking powder small spoon 1/8
  • Melted butter 45g
  • Fruit of your choice (Strawberry, orange, blueberry, kiwi etc)  some

Step 1

Add the beaten eggs to the Lübecker Marzipan from Germany a little at a time, mixing well. 

Step 2

Warm the dough in a bowl to body temperature in a hot water, remove the bowl from the hot water and beat well with a whisk until the dough is cool and ribbon-like.  

Step 3

Add the sifted flour, strong flour and baking powder together.   

Step 4

Add a small amount of the batter to the microwave melted butter and mix well, then add it back to the whole mixture and mix well.    

Step 5

Pour into buttered moulds and bake in a 180°C oven for 15 mins, then reduce the temperature to 160°C and bake for a further 20 mins.  

Step 6

Remove from heat and decorate with fruit of your choice.
