Swedish vodka-infused cream and sudachi udon

- Fresh cream 150 ml
- 1 tbsp grated cheese
- 2 tsp Swedish Aquavit PGI
- Sudachi peel as needed
- 1/2 sudachi juice
- A pinch of salt
- Some white pepper
- 1 udon ball
Toppings
- Some sudachi peel
- 3 sudachi (thinly sliced)
- Some coarsely ground black pepper

Step 1
Boil water in a pan and cook udon.
Step 2
Put the cream and Swedish Aquavit PGI in a frying pan over low heat and when it starts to simmer, add the sudachi juice and mix, then add the udon noodles and mix well. Add cheese powder and shaved sudachi peel, season with salt and white pepper.
Step 3
Serve in bowls and garnish with sudachi slices. Shave the sudachi peel again and sprinkle with coarsely ground black pepper.
