Portuguese Raw Ham and Yubari melon pancakes

Ingredients

Pancakes (for 1 pancake)
- 100g flour
- 70g Greek yoghurt
- 20g sugar
- 1 egg
- 1 tbsp cheese powder
- 5g baking powder
Sour whip (easy to make portions)
- 150ml cream
- 75g sour cream
- 15g sugar
- Portuguese raw ham (PDO) (appropriate amount)
- Yubari Melon (appropriate amount)
- Olive oil (appropriate amount)
- Coarsely ground a pinch of black pepper
Instructions
Cut the Yubari Melon in half, remove the seeds with a spoon and hollow out the flesh into a ball. Also prepare slices with skin for decoration.
Make the pancakes. Mix the eggs, sugar, cheese powder and yoghurt in a bowl with a whisk, add the sieved flour and baking powder and mix gently with a rubber spatula.
Heat a frying pan over medium heat, add the butter and melt, drop in the batter and cook over a low heat. When browned, turn the dough over, close the lid and let it steam for 1 minute. If desired, bake another slice in the same way.
Make the sour whip. Put the sour cream and sugar in a bowl and knead with a rubber spatula, then mix with a whisk, adding the cream a little at a time. Beat with a hand mixer to one eye.
Place the pancakes on a plate and garnish with (4), (1) and the ham. Finish with a drizzle of olive oil and coarsely ground black pepper.
