  • Irish Grass-fed beef PGI - Ireland: 1 slice
  • White miso: 50 g
  • Mirin: 10 g
  • Sake: 10 g
  • Sugar: 10 g

Step 1

Pour sake and mirin into a pot and heat to evaporate the alcohol (~five minutes).

Step 2

Gradually add the heated sake and mirin mixture to the white miso in several batches, stirring well after each addition.

Step 3

Coat the grass-fed beef evenly with the miso mixture and marinate for 1 day.

Step 4

Bring the marinated beef to room temperature, then brown the surface in a frying pan heated over medium heat.

Step 5

Once browned, pre-heat an oven to 220°C, wrap the beef in aluminum foil and heat in the oven for about 20 minutes.

Step 6

Slice the beef to your preferred thickness and serve on a plate.

Tips

Bake the surface of the meat until it is well-baked, then wrap it in aluminum foil and cook it with the residual heat.
