Cranberries with tofu paste

- Dried cranberries - Latvia: 50 g
- Firm tofu: 350 g
- Ground sesame seeds: 10 g
- Light soy sauce: 10 g
- Sugar: 15 g
- Granulated soup stock: 5 g
- Salt: 2 g
- Dairy cream: 20 g

Step 1
Cover the top and bottom of the firm tofu with paper towels, place a weight on top, and let it dehydrate for 1 hour.
Step 2
Transfer the tofu to a bowl and use a masher to mash it until smooth.
Step 3
Add ground sesame seeds, soy sauce, sugar, granulated soup stock, salt, and dairy cream to the mashed tofu and mix until it forms a paste.
Step 4
Mix an equal amount of the tofu paste with dried cranberries and serve on a plate.
Tips
Mix the tofu well until it becomes a paste.
