  • Water: 300 ml  
  • Men-tsuyu 2x Concentrated: 50 ml  
  • Japanese Kuzu Starch: 50 g  
  • White Sesame Paste: 50 g  
  • Salt: A pinch  
  • Blueberry Honey from Estonia: Appropriate amount

Step 1

In a bowl, mix water, men-tsuyu, and Japanese kuzu starch with a whisk.

Step 2

When lumps are gone, add white sesame paste and salt.

Step 3

Strain (2) into a small saucepan and warm over medium heat, stirring constantly with a wooden spoon.

Step 4

After kneading for 5 minutes until elastic, transfer the mixture into a wet mold, flatten the surface, and refrigerate for at least 2 hours to harden.

Step 5

Cut into pieces as desired, place on a plate, and serve with blueberry honey from Estonia.

Tips

By adding brightly colored honey, goma-tofu is quickly transformed into a stylish appetizer.
