Deep-fried Hanpen sandwich with Halloumi PDO cheese

- Halloumi PDO cheese - Cyprus: As needed
- Hanpen (soft surimi): 1
- 2x concentrated Mentsuyu (soup base for noodles): 100 g
- Water: 100 g
- Dried bonito flakes: As needed
- Potato starch: As needed

Step 1
Slice the hanpen in half horizontally, and cut the Halloumi cheese to match the same thickness.
Step 2
Sandwich the Halloumi cheese between the hanpen slices, then coat both sides with potato starch.
Step 3
Add a generous amount of oil to a frying pan and heat it.
Step 4
Once the oil is hot, place the hanpen sandwiches into the pan and cook until both sides are golden brown.
Step 5
In a separate pot, combine mentsuyu and water, and bring to a boil.
Step 6
Once boiling, add a slurry of potato starch dissolved in water to thicken the sauce.
Step 7
Plate the fried hanpen sandwiches, pour the thickened sauce over them, and top with bonito flakes.
Tips
By cutting hanpen and Halloumi cheese into the same thickness, you can enjoy both flavors equally.
