Grilled eggplant with Comté PDO cheese

- Comté PDO cheese - France: As needed
- Mixed miso: 50 g
- Mirin: 15 g
- Cooking sake: 15 g
- Sugar: 25
- Eggplant: 1
- Sesame: As needed

Step 1
In a pot, combine mirin, cooking sake, and sugar. Bring to a boil, then remove from heat.
Step 2
Place the miso in a bowl and gradually whisk in the mixture from step 1, stirring well to prevent lumps.
Step 3
Slice the eggplant into 1 cm thick rounds and deep-fry until golden brown.
Step 4
Arrange the fried eggplant slices on a tray and generously top each with Comté cheese.
Step 5
Grill using a kitchen torch or a toaster oven until the cheese is melted and lightly browned.
Step 5
Transfer to a serving plate, add more Comté cheese on top, and sprinkle with sesame seeds.
Tips
Toasting Comté PDO cheese gives it a delicious aroma.
