- Oat drink - Finland: 200 g
- Matcha: 8 g
- Sugar: 50 g
- Gelatin: 5 g

Step 1
Soak the gelatin in 50 g of oat drink.
Step 2
In a bowl, combine the matcha with another 50 g of oat drink and mix until smooth and free of lumps.
Step 3
Add the remaining oat drink and sugar to the matcha mixture, stir well, then transfer to a pot. Heat while stirring until just simmering being careful not to let it boil.
Step 4
Remove from heat, add the soaked gelatin from step 1, and mix until fully dissolved.
Step 5
Strain the mixture through a fine-mesh sieve and pour into a mold.
Step 6
Refrigerate until set, about 2 hours.
Tips
Warm the dairy cream until just before it boils.
