Sake flavored fresh organic chocolate

- Organic chocolate 77% high cacao - Estonia: 150 g
- Japanese sake: 30 g
- Bitter chocolate: 100 g
- Dairy cream: 200 g
- Butter: 30 g
- Cacao powder: As needed

Step 1
Let the butter sit at room temperature until softened.
Step 2
Melt the chocolate using a double pan or by placing the bowl over hot (not boiling) water. Add dairy cream and the softened butter from step 1, and mix until smooth.
Step 3
In a seperate pan, gently heat the sake to a simmer for 5 minutes to evaporate the alcohol, then stir it into the chocolate mixture.
Step 4
Pour the mixture into a mold lined with parchment paper and refrigerate until fully set (overnight is ideal)
Step 5
Once hardened, remove from the mold, dust with cocoa powder, and cut into pieces using a knife warmed in hot water.
Tips
Warm the dairy cream until just before it boils.
