  • Lübecker Marzipan PGI - Germany: 50 g
  • Orange jam (marmalade jam): 30 g
  • Sugar: 20 g
  • Almond flour: 15 g
  • Cake flour: 10 g
  • Cornstarch: 10 g
  • Butter: 25 g
  • Egg: 1

Step 1

Bring the marzipan to room temperature and smooth it using a rubber spatula.

Step 2

Add the egg to the marzipan and mix well with a hand mixer with paddle attachment. When combined, add the sugar and beat until the mixture turns pale. (The batter should be thick enough to hold its shape.)

Step 3

Sift the dry ingredients together and fold them into the mixture using a rubber spatula.

Step 4

In a separate bowl, combine the orange jam and a small portion of the batter from step 3 with the melted butter. Mix well, then return this mixture to the remaining batter and fold to combine.

Step 5

Quickly mix everything together, pour into a mold, and bake in a preheated oven at 160°C (320°F) for 25 minutes.

Step 6

Let the cake cool, then chill in the refrigerator. Slice and serve with a spoonful of orange jam on top.

Tips

Mix the ingredients without crushing the bubbles.
